HOMEMADE CREOLE SEASONING….
Tell me you don’t get tired of buying expensive spices? CREOLE SEASONING is EASY to make plus YOU have control over the HEAT and SALINITY.
The first version is a real favorite because it contains all 3 peppers: Black, White and Cayenne. Each of these touch a different place on the tongue providing for an amazing flavor experience. The second version is a nice blend of heat and flavor.
Feel free to experiment with the mix to find just the right level of heat and flavor you prefer. Also, keep in mind, if your creole spice seasoning is heavy on the salt then you may want to add less salt when making your final dish.
Some of my FAVORITE DISHES for this….Louisiana Creole Smothered Cabbage, Jambalaya, Spicy Potato Salad (made with CREOLE SEASONING and CREOLE MUSTARD).
I also use on shrimp, chicken and pork and I have quite a few New Orleans style dishes where I put this to good use.

- 2 tablespoons GARLIC POWDER (NOT GARLIC SALT)
- 2 tablespoons ONION POWDER (NOT ONION SALT)
- 2 tablespoons DRIED BASIL
- 2 tablespoons DRIED OREGANO
- 1 tablespoon DRIED THYME
- 1 tablespoon FRESHLY GROUND BLACK PEPPER
- 1 tablespoon WHITE PEPPER
- 1 tablespoon CAYENNE PEPPER
- 5 tablespoons PAPRIKA
- 3 tablespoons KOSHER SALT (REDUCE OR OMIT if you prefer)
- Combine and mix together or whirl in food processor (40 seconds) until just combined
- You may also use whole spice and grind for a more intense flavor.
- ⅓ cup HOT PAPRIKA
- ⅓ cup KOSHER SALT (REDUCE or OMIT if you prefer)
- ¼ cup FRESHLY GROUND BLACK PEPPER
- ¼ cup GARLIC POWDER (NOT GARLIC SALT)
- 3 tablespoons ONION POWDER (NOT ONION SALT)
- 2 tablespoons CAYENNE PEPPER
- 2 tablespoons DRIED OREGANO
- 2 tablespoons DRIED THYME
- Whirl in food processor (40 seconds) until just combined.
- ½ cup KOSHER SALT (REDUCE OR OMIT IF YOU PREFER)
- ⅓ cup PAPRIKA
- ¼ cup GRANULATED GARLIC (NOT GARLIC SALT)
- 4 tablespoons ONION POWDER (NOT ONION SALT)
- ⅓ cup FRESHLY GROUND BLACK PEPPER
- 3 tablespoons WHITE PEPPER
- 2 tablespoons CAYENNE PEPPER
- 2 tablespoons DRIED BASIL
- 2 tablespoons DRIED THYME
- 1 tablespoon DRIED OREGANO
- Combine all ingredients together or whirl in food processor for 40 seconds until just combined. Store in airtight jar.
